One of our favourite recipes, this brie and prosciutto oven-baked pie is the perfect addition for taking on a hike or hiding away at home on a freezing cold day.
- One packet of pre-rolled puff pastry
- One egg
- 250g small whole brie or Camembert
- 8 rashers of prosciutto or cured ham
- 1 tsp Dijon mustard
Lay the prosciutto in a circle with whole brie in the centre, and fold each rasher around the cheese until it is fully encased.
Roll out the pastry and place the brie in the centre. Beat the egg with a tsp of Dijon and lightly brush the inside of the pastry, then place the ham-wrapped cheese in the centre and fold in the pastry to encase. Refrigerate.
Heat the oven to 180 degrees and lightly oil a baking tray. Place pie on the baking tray, folded-side down.
Brush the top with the remaining mustard egg wash and bake for 40 mins or until golden. Enjoy!
