Spring & Summer Wedding Breakfast

This menu uses slightly similar ingredients, which is reflected in the cost, but does not loss any of the taste or style that is ej catering. Any pre-ordered dietary requirements can be accommodated

Summer roasted vegetables with home-made pesto on toasted Brioche
Salmon and prawn roulade with a lemon and cucumber dressing
Garden pea and mint soup with pancetta crutons
Chicken liver parfait with crostini and homemade chutney
Served with homemade breads and Welsh butter

Main course
Fee range chicken saltimbocca with parmesan crushed potatoes and rocket
Welsh braised lamb with stacked polenta crisps
Braised and roasted local pork belly with mustard mash and Gwynt y Ddraig’s Orchard Gold cider sauce
Sirloin of Welsh black beef with dauphinoise potatoes (£3.50 supplement)
Thai white fish and spinach coconut curry with basmati rice and prawn crackers
Grilled summer vegetable galette with feta and olive dressing
Served with a medley of summer vegetables

Dark chocolate tart with mascarpone cream
Strawberry and mint mille-feuille with Pimms coulis
French lemon tart with berry coulis

Parma ham, mozzarella and wild rocket salad with pomegranate, mint and balsamic dressing
Fresh crab tartlet with a lime and sweet chilli dressing
Home tea-smoked duck breast with tomato and onion chutney
Spring pea and asparagus risotto, Carmarthen ham crisp
Caramelised onion, Fourme d’Ambert and poached pear tartlets
Seared queen scallop with Trealy Farm chorizo and sprouting sweet pea shoots

Char-grilled sirloin of Welsh Black with a gratin of wild mushrooms
Confit of Welsh duck, served with homemade cassoulet and a chicory, apple and walnut salad
Welsh roasted rump of lamb with risotto verde and fine green beans
Slow braised belly pork with caramelised whisky and apple compote
Ballotine of free range chicken filled with wild mushrooms
Slow cooked shoulder of Welsh lamb with butternut squash puree and red wine rosemary


Lemon sole and salmon paupiettes with lemon saffron cream
Pan fried wild sea bass on a polenta and summer vegetable tian


Individual gooey goat’s cheese, leek and walnut strudel
Aubergine, tomatoes and feta pesto stack
Roasted organic tofu & toasted cumin on a bed of puy lentils

Served with dauphinoise, fondant or crispy roasted potatoes and a medley of buttered summer vegetables

VAT, Chefs, supervisor and waiting team, full hire of linen, crockery and cutlery

Some venues supply the drinks and glasses.  If you require glasses we can supply crystal glasses. £1.50 a head for reception and table glasses

Some venues and marquees require us to supply Lpg ovens, hot cupboards, tea urns, fridge.  The basic package required to serve your meal is £350.
