A warming autumnal dessert is the perfect way to finish your meal. Our sticky date pudding will provide you and your guests with a comforting sweet treat before the evening’s celebrations…
Recipe: Serves 4
You will need:
150gr – pitted and chopped dates
150ml – boiling water
125gr – butter
125gr – sugar
125gr – self raising flour
A few drops of vanilla essence
Glace ginger – 1 ball thinly sliced into matchsticks
Pre heat the oven to 180 degrees C
Butter 4 ramekins
Pour the boiling water over the dates and allow to stand and swell for about 10 minutes
Cream the butter and sugar until light and fluffy and beat in the eggs one at a time, fold in the ginger, vanilla and sieved flour
Lastly fold in the dates and spoon the mixture into the ramekins
Bake for 20-25 minutes or until firm and serve with butter scotch sauce
