Mediterranean Twist

This menu really is a friendly and informal feast that makes me feel more like I may be eating abroad. A setting of long trestle tables encourages guests to pass and interact. A plated garnished main is served to each guests with repeatedly placed salads and breads along the tables filling them with many flavours, great colours and smells. There is a picture within in the brochure on page 4.

Canapés

10 canapés turns your reception into a soiree and acts as a starter
Chinese duck in a filo basket
Abergavenny smoked salmon with lemon and caper butter
Marinated mozzarella and tomato skewers
Quail egg scotch egg
Remoulade and sautéed chorizo baskets
Fillet of Welsh beef with horseradish cream
Butcher’s glazed bangers
Meat balls and gravy with home made bread
Tempura of vegetables with chive mayonnaise
Deep fried risotto balls with roasted aioli

Plated Main Buffet
Slow-roast leg of Welsh lamb, spiced with cumin, cinnamon & garlic, and stuffed with dates, figs, almond & spinach
Barbequed Salmon & Monkfish kebab with citrus & coriander dressing
Griddled free range chicken spiced saffron yoghurt and preserved lemons
Roasted peppers, tomatoes & courgettes, all stuffed with bulgur, Halloumi, artichokes and raisins
Free range chicken and spinach lasagne in a creamy homemade pesto sauce with a crunchy parmesan crust, and an infused garlic and basil dressing
Slow braised and roasted local belly pork served with a whiskey, raisin and apple compote
Salmon, prawn and scallop risotto with an aioli dressing
Free range chicken and chorizo cassoulet with a trio of beans in a rich red wine and smoked paprika sauce
Butchers glazed ham with spiced apricot chutney

Roasted radicchio hearts with grilled spring onions, fresh parsley and lemon olive oil
Quinoa and carrot salad with a toasted cumin and lemon dressing
Panzanella, bread salad soaked in olive oil, tomatoes, peppers, cucumber and lots of basil
Mixed wild rice salad loaded with roasted vegetables with a homemade pesto dressing

Chewy berry meringue with fresh weeping strawberries and pimms coulis
Summer pudding with yoghurt ice cream and crumble
Hot chocolate fondant with white chocolate and pistachio custard
Double nut pavlova with poached peaches and Madagascan vanilla

Some venues supply the drinks and glasses.  If you require glasses we supply crystal glasses.

Some venues and marquees require us to supply Lpg ovens, hot cupboards, tea urns, fridge.  The basic package required to serve your meal is £350.
