Wedding Vegetarian Main course Stacked mushroom with cream feta & watercress

Ingredients  per serving

2 mushroom per serving

  • Season with salt and pepper, grated garlic, a knob of butter, baked in the oven at 160 for 25 mins.
  • Quickly Sauté 4 spring onion, 1 sliced red pepper, crumble in ½ a block of feta, splash of cream, allow to cook for a couple of mins on a low heat.  Add chopped basil.
  • Season to taste
  • Spoon onto the mushroom
  • Suitable to Cling & Fridge for later or stack and put back in the oven for a further 10 mins.
  • Serve topped with fresh watercress
