National Vegetarian Day – Wedding Day Menu


Gone are the days of uninspiring vegetarian dishes, so much so that over a quarter of the Nations evening meals now contain no meat or fish*.

To mark National Vegetarian Day, we thought we’d share with you one of our vegetarian Wedding menu’s which was put together by our creative director, Emma, for a Bride & Groom who opted for a fully vegetarian wedding breakfast.

Starter

                   Baked red peppers with cherry tomatoes, fresh basil, a black olive tapenade & red pesto dressing,              topped with a pea shoots salad

Leek and spring pea soup with crispy leeks

A salad of grilled aubergines, marinated artichoke hearts, salted Italian almonds &  baby leafs lettuce

Smokey paprika tofu with fresh tomato salsa

Main course

Butter bean & plum tomato ragout with brown rice and oven baked cauliflower

Roasted pumpkin filled with chick pea, mint, onion, tomato, topped with fresh gremolata and served with a grated carrot salad

Grilled Mediterranean vegetable stack with roasted cherry vines and pesto dressing

Lentil and herb loaf with tomato coulis served with roasted hispi cabbage & toasted hazelnut
